Illinois Residents Advised: Fully Cook Meats to Prevent Brain-Infecting Tapeworms

Chicago, IL – Illinois residents are being reminded of the critical importance of fully cooking meats, particularly bacon, to prevent infections from brain-infecting tapeworms.

A cautionary tale arises from a report in the American Journal of Case Reports detailing a 52-year-old man’s struggle with neurocysticercosis after consuming undercooked bacon. This serious condition, caused by larvae from the Taenia solium tapeworm, formed cysts in his brain leading to severe migraines and requiring medical intervention.

Neurocysticercosis is the most common parasitic infection of the nervous system globally but remains rare in the United States due to stringent food safety standards. However, this case exemplifies that even in developed countries, lapses in food preparation can result in such infections. With grilling season upon us, it’s a timely reminder for all who partake in cooking to ensure meats, especially pork, reach safe internal temperatures.

According to the Centers for Disease Control and Prevention (CDC), adequate cooking and handwashing are key in preventing such infections. Pork should be cooked to an internal temperature of 145 degrees Fahrenheit, followed by a rest period of three minutes. This safety step is crucial as it eliminates the risk of parasitic infections that can have long-term neurological consequences.

This incident highlights not only the importance of fully cooking pork but also raises awareness about the potential hazards of consuming any undercooked meats. The Illinois Department of Public Health encourages residents to use meat thermometers as a standard tool in their cooking practices, ensuring all meats are properly cooked to their recommended temperatures before being consumed.
